That's mine, in the fridge and resting as we speak.  How's your Thankgiving turkey gonna be?  What are the must have sides at your Turkey Day get2gether?

Happy Turkey Day.....and a wonderful Thanksgiving to all!



The fam loved the turkey last year.....so spatchcocked and dry brined it is again this year.  Prepared to be roasted over a bed of fresh veggies.



Looking good in the oven!

Word of advice.....the Luxardo cherries make the Old Fashioned!

We been doing this for around 40 years now. Two crockpots going. Brined Turkey slow roasted. Lots (and I mean lots) of sparkling wine & Chardonnay. Kids and all their pets (Cats & Dogs) are sleeping after a busy day in the woods as Mamma and I were cooking and chopping wood. The wood stove is cranking and I will sleep well tonight. I hope I never get so old I cannot do this.  
Don't ski the trees, ski the spaces between the trees.

I rub that bad boy with Sofrito /Adobo/ Sazon and olive oil..
Stuffing with wild mushrooms and spinach/roasted blue potatoes, yellow and red potatoes
I made a apple pie/ sweet potato pie...

not my favorite meal to eat ,but nice once a year..

Fixedheeln 'flash roasted' the turkey . 450 for 2 hr. Was great, moist tender.
Tele turns are optional not mandatory.
