A guided day around Andermatt would be fun, as it’s considered the freeride mecca of the Swiss Alps.

Cinque Terre is awesome - was there a couple years ago.  Didn't MTB, but did some hiking...come to find out after the fact, there's alot of MTB in the area.  Not in Cinque Terre but sorta nearby, google Finale Ligure.  EWS stops there, I think it's a very MTB influenced area.

And as Benny pointed out, Dolomites has the Hero which is around the Sella Group Sellaronda route.  Val Gardena is the base for this...we were there for a couple days, as part of a larger Italy trip, really wanted to MTB part of the sellaronda, but got rained out

Any resort skiing in Europe in April, when the schools have break? If so where, if so is it any good?

April can get a bit risky to book this far in advance.  Look for higher altidtude resorts.  Switzerland has many of these but it’s much more expensive.  We had done Easter week at Davos and it was great and not that busy.  Also look for northern facing resorts.  

Chamonix is really good in April as it has multiple exposures where you could ski on one side of the valley then take a bus to the other side and do the other exposure. The issue there is how strong of skiers your group is.  This is a serious expert area that advanced intermediates could get themselves in deep doo doo.  Sno w conditions off piste could be all over the map and you better be able to ski 3000 Vert of mank should that corn over cook.
