Well, if you can figure it out, try to get up into the Dolomites, specifically around Arraba and Cortina. You could do it moving from Venice to Como, or, even Garda, not far from there. I was up there for a few days on this last trip. Unreal scenery. Prettiest mountains I've ever been in. MTB isn't my thing, but, there's plenty of it there, and it must be really cool. I'm pretty sure there's rentals, too.
There's an event in June, I think, called The Hero, which is, basically a weekend long mtb festival with a 65 mile race/ride as a centerpiece.

Cinque Terre is awesome - was there a couple years ago. Didn't MTB, but did some hiking...come to find out after the fact, there's alot of MTB in the area. Not in Cinque Terre but sorta nearby, google Finale Ligure. EWS stops there, I think it's a very MTB influenced area.
And as Benny pointed out, Dolomites has the Hero which is around the Sella Group Sellaronda route. Val Gardena is the base for this...we were there for a couple days, as part of a larger Italy trip, really wanted to MTB part of the sellaronda, but got rained out
Skiing is not a sport, it is a way of life.
