That article makes me realize that I'm even happier to get my beef from my neighbor. He uses a local butcher and not a massive factory.

This is where my beef comes from.  It is about 5 miles from my house.  I have a hard time eating burgers at restaurants and almost never order them out because this beef is so much better than commercial beef.  100% grass fed

The steaks are smaller as they raise Scottish Highland cows which are by nature smaller.  They have thick fur for a cow so they don’t have to put on fat for our winters.

Not a bad life for a cow by comparison of what commercial cattle lives are like.

This is my bacon dealer.    Yeah, he also sells other meats that I buy, but his bacon is outstanding. I am a self-professed bacon hoarder.  I currently have three pounds in my freezer, and some hot Italian sausage links that I bought last weekend.

Also in my freezer are some beer bangers and cheddar jalepeno sausages from the Piggery.  Tonight, I am having a leftover Tburg griller, which is garlicky and spicy.

Between mid-May and mid-December, my veggies come from Nook and Cranny CSA and Snow Farm Creamery has just started their cheese CSA.  For the next twenty weeks, when I pick up my veggies, I also am picking up 8 oz of super yummy cheese.

This is a real mom and pop farm
I don’t see them having an outlet store anywhere.  It is a small farm and operation
Might be a somewhat common name so I doubt it’s the same folks
We buy a quarter cow at a time 2 or 3 times per yr have been doing this with them for 10+ years
They do have a few local restaurant accts as well
if You French Fry when you should Pizza you are going to have a bad time

We have a very hungry teenage athlete
He is lifting then eating protein.  We plan to give him twice what ever I might eat

Also these highland cows are much smaller than an an angus
A quarter is around 120 lbs hung weight

We have tried local pork but have found free range pork is too fatty
We have had excellent local lamb and goat.  We eat a lot of lamb burgers so we just get the ground meat instead of half a lamb though we have done it a couple times

Really surprised but you are right they have a shop in West Nyack and their farm here.  Must be a family connection down there.  The ground beef is fantastic.  If you are making chili you will need to add some pork sausage as it’s very lean.  Well over 90%.

The roasts and other cuts tend to be small compared to what you see in mass produced meat but very tasty.  Be careful to not overcook with so little fat in the meat.  Do lots of braising.

Filets for another day.  My buddy (wholesale purveyor) got me a couple of 8lb Angus tenderloins.  Roasted the heads and a chateaubriand with my family Saturday, used the tails for a lovely Stroganoff tonight, and cut the other chateaubriand into filets for later use.  Pretty nice marbling for filets.
